Children in Need brought out some of the baking skills in me last week, as we held a bake sale in our school to raise money for the excellent cause. I baked some chocolate muffins, because who doesn't like a bit of chocolate?! It turned out they went down really well; so I wanted to share the recipe with you!
Ingredients
175g of butter
165g of caster sugar
115g of self raising flour
50g of cocoa powder*
4 tablespoons of boiling water
3 eggs
1 and a half teaspoons of baking powder
Directions
I just wanted to make a note here that I found this recipe worked best when I had an electric whisk on hand rather than a wooden spoon, however they still did taste lovely when I did make them without an electric whisk!
Preheat the oven to 180°C and line a 12 hole muffin tin with paper cases. Mix the cocoa powder and the boiling water together until smooth. Then add the butter and sugar and mix until it is all blended together. Next, sift in the flour and the baking powder into the mixture and mix until no flour can be seen. Finally add the eggs one at a time, taking care to beat the mixture well after each addition to stop the batter from becoming curdled. Evenly divide the mixture between the cases; there will be quite a bit of cake batter in each case due to them being quite big, and bake for 10 minutes.
I left them to cool for a while, and after that I cut out a circle in the middle of the cake and stuffed them with chocolate spread which also made them taste really good!

*This depends on how chocolatey you want the muffins, the original recipe stated 40g, but I added more as it was for school!
I love baking, although, I find it more enjoyable in winter as it's not so hot. I'll have to try out this recipe sometime :)
